Gluten Free Chocolate Chip Oatmeal Cookies
1 Cup of Brown Rice Flour
1 Cup of Amarath Flour
1 1/2 cup Oatmeal
1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. xanthum gum
1 Tsp. Cinnamon
1/2 cup coconut oil ( vegetable oil works too..or earth balance margarine or other vegan buttery spread )
1/2 cup sugar
1/2 cup agave nectar
2 Tbs of flax meal plus 6 TBS. of boiling or hot water
As many chocolate chips as you like. ( I used a whole bag which is the equivalent to two cups ).
To make Flax eggs- Combine the two Tbs. with the hot water and let sit approx. 5 minutes.
Mix all wet ingredients together well. In separate bowl mix together dry ingredients and chocolate chips. Combine wet and dry ingredients and mix until combined.
Scoop out cookies to your size of choice and bake at 350 for 10-12 minutes.
